I always recommend mornings for most locations so that there are fewer people in the backgrounds of your photos. Sunset is the best light to photograph in but be aware that cloud coverage moves quickly and if the sun falls behind clouds, locations may photograph a lot darker.

Engagement photos at Pollock Country Park benefit from a diverse background of florals and architecture. Stroll through the small labyrinth at Pollock Country House. I recommend any time between 8am and 11am as a start time.
